It doesn't make sense for him to be required to stay if nobody will be there to watch him. I've had 2 males neutered and 3 females spayed, and none of them had to stay overnight. Also, neutering isn't nearly as invasive as spaying, they don't have to cut through layers of muscle to neuter, so I really don't understand why it requires an overnight stay.
They were also allowed to eat as soon as they wanted food.
If you have the option, I would find another vet.
