I use the red sauce. Sometimes I buy the El Paso canned which is my favorite, sometimes I make my own, sometimes I mix it up. I never fry them (I'm not that good a cook). I call them enchiladas because I like the enchilada sauce, but to me, they are probably more like a chicken burrito. I only use tortilla shells, not the enchilada shells, and sometimes, I just use chicken, cheese and salsa, sometimes I add rice and beans. Cover them in sauce and cheese and freeze. I have froze them both before I have baked them and after.
Does anyone use chicken soup? Take a can of chicken soup, a small tub of sour cream, a can of enchilada sauce (red) mix together, (if it is too thick add a small amount of chicken broth or another can of enchilada sauce) and spread that over the top of you enchiladas/burritos top with cheese (or mix the cheese into the sauce mix) and bake!
