I have so many cookie recipes from years gone by
I was always the cookie maker in my family but stopped because
now that everyone is all grown up no one wants to eat the
calories! Poo on them.
Elaine, I have one but I don't believe it's an Italian cookie.
It's a round cookie cut out with a cookie cutter and filled in
between with current jelly then the top of the cookie get's a
whole in the middle for the jelly to bubble out while cooking.
When cooled sprinkled with powered sugar. I guess you could
put the choc frosting on it if you wanted. It's a large cookie
when baked and delicious.

Of course you can use any jelly you want but the current is
a tiny bit tart and just goes with the sweetness of the cookie.
ps. I have an Italian Ricotta cookie that get's icing on it.
