| Fancy a bit of Laksa? Okay, so I've just discovered this dish and I'm in love with it and thought that maybe people might not have tried it and might be after something new and yummy! For one person you need: - 1 garlic clove, crushed - 1 spring onion finely chopped - 2 tsp finely chopped fresh root ginger - 1 green chilli, deseeded and finely chopped - juice from ½ lime - 100g prawns - 165ml can coconut milk - 100ml chicken or vegetable stock - 100g dried egg noodles - chopped coriander, to serve To make: 1. Heat oil in a pan. When hot, throw in the garlic, spring onion, ginger and chilli. Cook for a couple of minutes and then squeeze in the lime juice. 2. Add prawns, followed by coconut milk and stock. Simmer gently. 3. Cook noodles until soft before adding them to the coconut mixture. Season to taste then add coriander. 4. Enjoy! P.s. It's also nice with chicken |
