| What chef's recipes could you not live without? I make so many of Rick Bayless' recipes, from his ancho powder and apple cider vinegar marinated BBQ chicken, to his ridiculously complex but unbelievable mole poblano, to his charro beans that are far better than the ones at any restaurant I have ever been, to his rich and flavorful pozole rojo that tastes like liquid pork and chili. For anything non Mexican I love Gordon Ramsay and his pork chops on top of sweet and sour peppers cooked in red wine vinegar, to his Christmas beef wellington with parma ham and ground chestnuts in the filling between the filet and the pastry, to his quick chicken, broccoli, and rice noodle stir fry to his vanilla caramel covered pancakes with caramelized fried banana. Any time I want to cook something more complex than chorizo and egg or a ham sandwich it's usually a recipe from one of these two.
