YT 2000 Club Donating Member | Stuffed peppers The other day I made stuffed green peppers and they were so delish. I have not made this dish since I was a vegetarian. But this recipe does call for meat in it. Parsley garlic red pepper flakes salt n pepper 5 whole cloves of garlic. Beef stock balsamic vinegar diced tomatoes onions a dash of worchester sauce... Rice cooked and blended into the meat Meat was 1lb hamburger and 1/2 ground pork. Oh yes a cup of grated parmesan cheese.

| Sounds like my recipe!! Except I have not used the balsamic vinegar! Next time, I will add some! How much do you add? I LOVE stuffed bell peppers, but my son is not wild about them...bless his heart, he NEVER says anything to me about "not liking" a particular dish after I have made it......this young man would DIE before he said or did anything that would "hurt my feelings"....he will sit and spend 3 hours, trying to eat a bell pepper....he didnt like the green peppers, so I did switch to the yellow and orange peppers because I was told they are not as strong as the green peppers....but it really did not influence the final outcome....so now, I make 4 peppers, and eat one a day until they are gone! I LOVE them! |

YT 2000 Club Donating Member | 1 tblsp of balsamic vinegar. Did I mention the diced tomatoes? You cook those with the beef broth for a few minutes. You add in the balsamic at the very end to the broth.

| I didn't like green peppers when I was little so my mom made some meatballs with the stuffing mixture and cooked them alongside- She called them porcupine meatballs because the rice stuck out allover! |

| This is what I do with my son's portion....I make meatballs out of 1/2 the stuffing used inside the bell peppers, with rice added....he loves those! |

| For some reason I hate green bell peppers. I don't mind the red ones. They are the same, but the red ones are left to ripen so they have a sweeter taste. The green ones don't taste like much, but on a pizza I can only a taste the green pepper nothing else! Anyway, we went to buy some red ones at the market. Well the green ones are $0.99/lb, and the red ones are $1.50 each! Wow.
