| Anyone have experience in freezing corn..... I'm trying to avoid eating anything made with GMO corn so finding non gmo sweet corn has been a bit difficult. I did locate a farmer who's going to have a crop of corn in August. Since it has been so difficult to locate sweet corn w/o gmo's I wanted to get a bit to freeze for later in the year. My question is, can you freeze it still on the cob and have it taste like fresh? Will the texture suffer doing it this way? Any tips will be appreciated.

| I always freeze in the husk. Then take out enough for a meal. It tastes fresh picked.

| When you say you freeze it in the husk do you mean you just freeze it without doing any precooking? You just bring it home and put it in a freezer bag? Do you have to thaw it before cooking or just put it frozen into boiling water?

| I freeze it without cooking. If cooking on the cob I just thaw and cook in the shuck on the grill or in the microwave. No need to shuck. If you boil it you would have to thaw and shuck it.

| I used to buy corn by the bushel....I was told to "blanche" it, which involves putting it in boiling water for a few minutes...then I had an aunt tell me to just put several ears for family meal, in a zip lock bag, forget blanching, and freeze it! Worked great! Saved a WHOLE bunch of time! And now that I have my Food Saver, I put 5-8 unshucked cobs in a bag, seal it air tight, and toss it in the freezer, where that corn lasts easily for over a year! |

| I take mine out of the freezer, I do let them sit at room temp while I cook the rest of my meal, then I put the thawed, shucked cobs in salted boiling water, that I have also added a little sugar to.....I dont ever "time" anything, I pinch and pull and stick and poke and smell and taste everything for doneness....but I think after the cobs go into the rapidly boiling water, when the water returns to boiling, I let them boil about 7-10 minutes....until they are tender to the fork. |

| I don't eat grains so can't help on this corn thing but I was curious yorkiemom1 how do you like the food saver? I cannot stand any air in my frozen foods and it is impossible to get it out without a device so I was thinking of buying it. I don't want to derail the topic so PM me about this if you want.

| We do the following two ways. 1: par boil your corn. ( I do this in a large cassaroll dish and pour boiling water over, once the water is cool / room temp take out and slowly cut down each side of the cobs. This relases the corn and now you go on to step two choice of packaging...... A or B A: Take out cookie tray lay corn all over it, freeze and then place in vacuum seal bag. B: The option we use alot for camping. Place on dehydrator racks and dry till hard as a rock. Place in vacuum seal bags. To use again.. A: Just thaw and warm add salt and pepper. B: Place in boil water and let sit till dehydrated and use / eat on trail. C: Consume frozen or dryed for snacks Hope this helps, If you ever want to know more look up books on persevering and homesteading. Chewy in Kanata |
