Default Gluten-free eating, managing celiac disease

Hey yall, after being sick for about 5 years and avoiding the Dr. I finally gave in and after lots of testing they have figured out what is triggering my symptoms. Turns out I have celiac disease aka gluten intolerance. It's an auto immune disorder. I have to meet with a nutritionist but ind the meantime I figured I'd start a thread about it here and ask for advice.

Does anyone have celiac disease or just eat gluten free for other reasons? If so, I would appreciate any tips I can get. I feel like gluten is in just about everything. I can't believe this whole time I've basically been poisoning my own body. I'm honestly SO excited I know what's wrong now and I can manage it by changing my diet. I always asked myself what is wrong with me...? Why do I get sick from eating just about anything? Am I going to be sick forever? So being diagnosed was a big relief.

Anywho, there may already be threads about this so I'm going to go read up, but please feel free to add any input about eating gluten-free!

I eat a completely grain free, legume free and dairy free diet. Therefore it's gluten free. Feel free to PM me if you would like!

I found out that I had a gluten intolerance on my own through Google. My allergist and dermatologist could figure out why I had a rash (didn't itch, but looked awful). I cut out gluten and it went away. Tested it with pizza and beer , and in less then 30 minutes I HAD to find a bathroom - fast! Rash also came back. I have never intentionally eaten gluten again. My FP discovered the severe intolerance via saliva testing, but my understanding is that the only way to confirm Celiac is for me to start eating gluten again. Not going to happen, especially when the only cure is to stop eating gluten. It's really not that hard to avoid. Most store carry a pretty good selection of gluten free products, but they are pricey. Fresh vegetables, fruit, meat, fish, etc. are easy. Your fav restaurant Panera has a "hidden" gluten free menu - Access into Panera's Hidden Menu :: Articles & Tips :: MyPanera

Yep, if you stop eating gluten on your own they can't test you for celiac disease. I did the saliva testing but after that they wanted further testing. I had several blood tests. Finally came back today that I do indeed have celiac disease. It was crazy how I had every single symptom. I've had a bad rash on and off for the past several years and saw several dermatologists who couldn't tell me what it was. I know what it is now lol. It'll be interesting to see how much I improve and how quickly. I eat pretty badly in general so its going to be difficult to not just cut back on, but fully eliminate, gluten. I'm going to head to Barnes and noble today to pick up some books. I found a book on Amazon called Gluten Free Guide to Fast Food by Adam Bryan. Thank you for the link about Panera. Sad my fave soup isnt on there but I honestly love everything Ive ever tried from them.

If you have a Trader Joe's near you, they have a lot of gluten free foods. I found the following link. I hope you start feeling better now. Thankfully this is something that is really helped with changing your diet.

I am gluten free. I don't always eat gluten free, and when I don't, my body lets me know!!!

It's hard buying food that has no gluten, and make sure to let a restaurant know, because I was shocked at some of the things that have gluten in them - most of Buffalo Wild Wings sauces have gluten in them. Papa johns makes a gluten free pizza crust that's pretty good, and we use corn tortillas for everything instead of flour. What I really miss is doughnuts and pastries. Gluten free doughnuts taste like cardboard!!

Yikes. Does that mean you can't have sushi? The only gluten-free thing I make are treats for Tessa. I hope you will be able to adjust to all gluten-free foods. It's going to be tough, especially with cravings but at least now you know what's going on with your body.

I sooo wish I had a Trader Joe's close to me! I did find a pretty nice gluten-free section at Kroger today and got lots of good stuff and picked up my probiotic and vitamins.

Still searching for an alternative to bread for sandwiches. There was no gluten free bread or wraps. I guess it's better this way, cuts some carbs out of my diet. I had a tasty turkey and spicy avocado lettuce wrap for lunch.

Had a big talk with Tony about all of this and he really seemed just..overjoyed to know I can start feeling better. It was really sweet. He said he's been so worried about me and scared how sick I was. We're going to the nutritionist together and he promised to change his eating habits too, to support me. Who would think I would be happy to find out I've got an autoimmune disorder?! Lol. I'm just relieved. It sounds soooo *dumb* but I was really scared I had something horribly wrong with me. This has been super emotional! But I feel better than I have in years already, just with the knowledge of how to control this.

I love (fortunately or unfortunately) Udi's bread. You can now find in the bakery freezer section at Wal-mart. Most gluten free bread tastes like cardboard and the bread mix was very dense and heavy. Try Udi's.

Thank you! I'll check that out soon. I absolutely love bread so that's my one thing I will miss the most. Haha. I got some gluten free pasta and I'm curious to see what it tastes like.

Why could she not have sushi?? Rice is not a wheat product. It's its own grain.

I was curious because I have not heavily researched it. Wheats and grains seems to fall in the same family from what I had thought.

you have to be careful with rice. Make sure you read the ingredients. Some of the rice products have gluten in them. My boyfriend is allergic to gluten. He breaks out in blisters when he eats anything with gluten in it. I have started trying to buy and make stuff without gluten in them. We made some brownies (got the mix at walmart in their gluten free section) and they were pretty good.

We use those mixes and like them. I omit the oil and use applesauce instead and it makes them moister.

And I have never seen a rice with gluten in it. Rice does not belong to the wheat grass family. It's on my approved list of foods to eat that I received from my nutritionist when I was diagnosed.

Is it Gluten Free? A Basic Diet Guide for Celiacs

Getting the gluten-free diet right is easy when you know the ground rules. Follow the guidelines below and you will be on your way to a happy, healthy gluten-free life.

This material is not intended to provide medical advice, which should be obtained directly from a physician.

YES

Foods made from grains (and grain-like plants) that do notcontain harmful gluten, including: Corn in all forms (corn flour, corn meal, grits,etc.). Rice in all forms (white, brown, basmati and enriched rice). Also amaranth, buckwheat (kasha), Montina, millet, quinoa, teff, sorghum and soy.

The following ingredients:
Annatto, glucose syrup, lecithin, maltodextrin (even when it is made from wheat), oat gum, plain spices, silicon dioxide, starch, food starch and vinegar (only malt vinegar might contain gluten). Also citric, lactic and malic acids as well as sucrose, dextrose and lactose; and these baking products: arrowroot, cornstarch, guar and xanthan gums, tapioca four or starch, potato starch flour and potato starch, vanilla.

The following foods:
Milk, butter, margarine, real cheese, plain yogurt and vegetable oils including canola. Plain fruits, vegetables, (fresh, frozen and canned), meat, seafood, eggs, nuts, beans and legumes and flours made from them.

Distilled vinegar is gluten free. (See malt vinegar under NO below).

Distilled alcoholic beverages are gluten free because distillation effectively removes gluten from wheat. They are not gluten free if gluten-containing ingredients are added after distillation, but this rarely, if ever, happens.

Mono and diglycerides are fats and are gluten free.

Spices are gluten free. If there is no ingredient list on the container, it contains only the pure spice noted on the label.

NO

Wheat in all forms including spelt, kamut, triticale (a combination of wheat and rye), durum, einkorn, farina, semolina, cake flour, matzo (or matzah) and couscous.

Ingredients with “wheat” in the name including wheat starch, modified wheat starch, hydrolyzed wheat protein and pregelatinized wheat protein. Buckwheat, which is gluten free, is an exception.

Barley and malt, which is usually made from barley, malt syrup, malt extract, malt flavoring and malt vinegar.

Rye

Breaded or floured meat, poultry, seafood and vegetables. Also meat, poultry and vegetables when they have a sauce or marinade that contains gluten, such as soy and teriyaki sauces.

Licorice, imitation crab meat, beer, most is fermented from barley. (Specialty gluten-free beer is available from several companies.)

MAYBE

Dextrin can be made from wheat, which would be noted on the label, and would not be gluten free.

Flavorings are usually gluten free, but in rare instances can contain wheat or barley. By law, wheat would have to be labeled. Barley is usually called malt flavoring. In extremely rare instances, neither barley nor malt is specified in a flavoring.

Modified food starch is gluten free, except when wheat is noted on the label, either as “modified wheat starch,” modified starch (wheat) or if the Contains statement at the end of the ingredients list includes wheat.

Oats used to be considered unsafe, but recent research has shown that a moderate amount of special pure oats is safe for most celiacs. Several companies produce oats specifically for the GF market. They are labeled gluten free.

Pharmaceuticals can contain gluten, although most are gluten free. Check with the pharmaceutical company, especially if you take the medication on a continuing basis.

Processed cheese (spray cheese, for example) may contain gluten. Real cheese is gluten free.

Seasonings and seasoning mixes could contain gluten. Wheat will be noted on the label as required by law.

Soy Sauce is usually fermented from wheat. However, some brands don’t include wheat and are gluten free. Read the label to be sure.

Special Cases

Caramel color is almost always made from corn, but it can be made from malt syrup. However, in more than 10 years, we have not been able to find a single instance of a caramel color produced this way. Companies in North America say they use corn. You can consider caramel color GF.

Hydrolyzed vegetable protein is a phrase that under federal regulation should not be used on a food label. Food processors have to identify the “vegetable.” So you might read “hydrolyzed wheat protein,” which would not be gluten free, or “hydrolyzed soy protein,” which is gluten free.
