Indian Cuisine I received the most amazing box of Indian spices as a gift from my BFF. Now...what to do with them:p For those who cook Indian food could you share some of your favorite recipes. Most of these spices I have never heard of, but they smell amazing. I keep opening the box and just smelling of them:D |

Here are some BASIC starter recipes These are from Chowhound and are basic recipes that contain Indian spices. Not authentic but I assume they are still very very tasty :thumbup: Really Basic Chicken Curry Recipe? - Home Cooking - Chowhound "This simple dish of curried chicken and onion proves that even the most basic curry can still pack a punch." INGREDIENTS: 6 skinless, boneless chicken breast halves - cut into strips 1/4 cup olive oil 2 large onions, diced 1/3 cup curry powder, or to taste DIRECTIONS: 1. Heat oil in a large skillet over medium heat. Add onion and saute until soft and golden brown. Slowly stir in curry powder. Once ingredients are blended together, add chicken breasts. Cover skillet and simmer over medium low heat for about 45 minutes or until chicken is cooked through and no longer pink inside. 2. Remove cover from skillet and cook for an additional 15 minutes, until sauce reduces. (Note: Make sure that you stir and that dish does not burn, as curry powder burns very easily!) |

Time 30 minutesServes 4 Ingredients 125ml (1/2 cup) beef stock 1 large brown onion, chopped 2 garlic cloves, crushed 2 (300g each) lamb eye of loin (backstraps) 2 tbs mild curry paste (Patak's brand) 1 400g can Italian diced tomatoes Salt & freshly ground black pepper Cooked basmati rice, to serve Fresh coriander sprigs, to garnish 1 200g container skim milk natural yoghurt, to serve How to make it Place the stock, onion and garlic in a medium non-stick saucepan. Cover and bring to the boil over medium heat. Reduce heat to low and cook, covered, for 6 minutes or until the onion is soft. Meanwhile, cut the lamb into 3cm pieces and combine with curry paste. Transfer the onion mixture to a bowl. Heat the pan over medium-high heat and add a third of the lamb. Cook, tossing occasionally, for 1 minute or until the lamb is just sealed all over. Transfer the lamb to a plate and repeat with the remaining lamb in 2 more batches. Return the onion mixture to the pan and stir in the tomatoes. Bring to the boil over medium-high heat. Reduce heat to low and cook, partially covered, stirring often, for 6 minutes or until sauce thickens slightly. Stir in lamb and cook, uncovered, stirring often, for a further 2 minutes or until lamb is cooked to medium rare. Taste and season with salt and pepper. Place the rice in serving bowls. Spoon the curry over the rice and top with the coriander. Serve immediately with the yoghurt. Notes & tips Use any favourite Indian curry paste. |

Those both sound yummy, but I have never eaten lamb and I don't think It is sold around here. I would use chicken too :p Here is a recipe that Lisa gave me yesterday..I made it today and all I can say is...AMAZING!! 1lb chicken cut into cubes 1 onion chopped 2 T curry powder 1 T tumeric 1 T cumin or cumin seeds 1 t. coriander a pinch of cardamon powder or if you use a cardamon pod..remove it and don't eat (I used powder) not required but I used a pinch of fenugreek and some black cumin seed and about 1/4 t. of sazon a pinch of asifatida 1 can of cream of chicken or cream of mushroom soup 1 can of milk brown chicken and onion ( I used my electric skillet with a tad of olive oil) add spices and toss until your chicken is coated, quickly add your soup and milk so the spices don't scorch. Simmer for 20-30 minutes I served it topped over rice that I seasoned with cumin seed, salt and a tad of cumin powder. My first Indian dish was a huge success!!!! |
