| Cupcake question My dd is planning a baby shower for her cousin this weekend. She wants me to make cupcakes from a banana cake recipe she likes with cream cheese frosting. My question is this, that recipe is more of a sheet cake/bar type that is more dense than it is fluffy. Will it turn out ok in cupcakes?

| I have no clue Shelly, I am not much of a baker. Can you make a couple of cupcakes from the batter before you ruin the whole batch? I bet they will do fine though. Muffin batter is a lot denser than cake batter and they do well in cupcake pans.

| Oh! I never thought about that, but that makes sense. I like to bake, but I am not a big cake baker or eater for that matter.

| Can you look at the instructions on a box of cake mix? I think they usually have instructions for baking in round layers, in a sheet, and for cupcakes. They use the same mixing / ingredient instructions, but adjust the times and temps depending on which pan you are using. You could go by those instructions to help you determine how to adjust your time and temp for baking in a muffin pan. I don't see why it wouldn't work, even if it is denser than a regular cake.

| Making cupcakes out of cake mix is fine. If you want to make it lighter...try using sprite or 7up in place of the water mixture. Also if you want to make it even more yummy try pumping some cream cheese frosting in the middle of the cupcake before you frost it.

| I am using a homemade banana cake recipe that is intended to be baked as a sheet cake rather than in a cake pan and it is normally more dense rather than fluffy. That's why I am asking if using this recipe will be ok for cupcakes. I think I am going to try it. Won't be the first cupcakes I ever ruined if it doesn't work. I love the idea of putting some cream cheese in the center..............yummy! Thanks

| I love cupcakes! and bannana ones sound yummy, something different rather than the ordinary chocolate or vanilla . ( sorry i am no help at giving advice at baking though )

| LOL, that's ok. It's helpful to know you don't think they sound terrible for a baby shower. This recipe recommends serving chilled or cool, which makes it a little easier since you never know if we're going to have a cool day or a hot day this time of year.
