| Another Human Nutrition Question (Sodium) My doctor put me on a sodium limit (1100 - 1500 mg./day). I have been doing well on it, but I have a question about canned vegetables. They are usually high in sodium, but I want to make a recipe that calls for pinto beans. My question is, if you drain and rinse the beans does that reduce the amount of sodium? In otherwords, does what's listed on the label include the juice? If it does reduce the amount of sodium what is your best guess by how much. 1/4? More/less?

| I would think rinsing would reduce the sodium. But why not buy the dried pinto beans and cook them first and then use them in your recipe. Are there cans of low sodium pinto beans available??? I know some canned foods have "low sodium" on the label. But not buying much in the way of canned foods I don't know.

| Dried pinto beans need to be soaked before cooking. I am not fond of pinto beans, but I have cooked other dried beans. Buying the dried beans are better than canned. here is a website with info on soaking and cooking them. (The ones you buy in cans are precooked) How to cook dry pinto beans
