| Soup recipes for dinner??? Considering the fact it was SNOWING here this morning. I really feel like a great soup for dinner tonight. Anyone have any wonderful soup recipes worth sharing?? Thanks ladies! These threads usually turn out kind of fun..

| Oh Deb you're killing me!!!! The last time I asked about dinner, I think it was you who suggested I look at the menu, pick it out and eat it Call me slow but I think I'm noticing a pattern here......

| Sheesh, pull my arm why dontcha?? Here I am trying to be a good wife and cook dh a good meal. Unfortunately with Ranger having to have surgery we better start saving some cash. Campbell's it is then, eh?

| OK I am going to try to find my FAVE of all time.... You are going to have to redouce the portion because it is a restraunt portion!!! But you are in for a treat! (if you like seafood) Ingredients: Step 1: ˝ cup Olive oil 3 ea. Red bell peppers, rough dice 3 ea. Green bell peppers, rough dice 2 ea. Yellow onions, rough dice 1 ea. Fennel bulb, rough dice 8 ea. Garlic cloves, rough chop Step 2: 2 cups White wine 1 Tbls. Red chili flakes 4 ea. Roma tomatoes, rough chop 1 ea. 46 ounce can clam juice 1 ea. 46 ounce can tomato juice 1 ea. 28 ounce can roasted red peppers with juice 1 gallon chicken stock 1 large pinch saffron 1 Tbls. Course ground black pepper 1 tsp. Kosher or sea salt 1 tsp. Ground cinnamon 1 ea. 46 ounce can chopped clams in juice Preparation: Step 1: Combine in a large stock pot and sauté until vegetable start to become soft. Step 2: Add white wine to vegetable and simmer for 3 minutes. Add all remaining ingredients. Simmer for 20 minutes then remove form heat and puree. Return to stove and simmer for another 10 minutes. Remove from stove. Add chopped clams. The sauce is finished. This will make 2 gallons of sauce. You can continue making a traditional cioppino by adding any combination of crab, clams, shrimp, scallops, squid, mussels and fish. Cook the seafood in the sauce. You can also use as a sauce over grilled or roasted seafood. Serve with fresh bread or over pasta or rice. The St. Paul Grill 3/17/2009 9:57:16 AM

| I have a couple good ones that are pretty easy to make. Chili's baked potato soup 4 large baking potatoes 2/3 cup butter 2/3 cup flour 6 cups milk 1 tablespoon salt 1/2 teaspoon black pepper 1/2 teaspoon white pepper 4 green onions, chopped and divided 12 slices bacon, cooked and crumbled 2 cups medium Cheddar cheese 2 cups sour cream Wash, dry and prick potatoes with a fork. Microwave potatoes until completely soft. Cut into halves lengthwise and scoop out pulp, set aside. In a large stockpot, melt butter over low heat. Add flour, stirring until mixed thoroughly; about 1 minute. Gradually add milk, cook over medium heat, stirring constantly with a whisk until mixture is thickened and bubbly. Add potato pulp (using whisk to break up potato chunks), salt, pepper, 2 heaping tablespoons green onions, half the bacon and 1 cup cheese. Cook until thoroughly heated. Stir in 1 cup of the sour cream. Add extra milk if necessary to achieve desired consistency. Serve topped with dollop of sour cream, green onions, bacon and cheese. and one more that we really love... Zuppa Toscana Ingredients 1 pound spicy Italian sausage - crumbled 1/2 pound smoked bacon - chopped 4 cups water 2, 14.5 ounce cans (about 3 2/3 cups) chicken broth 2 large russet potatoes - scrubbed clean, cubed 2 garlic cloves - peeled, crushed 1 medium onion - peeled, chopped 2 cups chopped kale OR Swiss chard --> I used Spinach 1 cup heavy whipping cream salt and pepper - to taste Directions 1. In a skillet over medium-high heat, brown sausage, breaking into small pieces as you fry it; drain, set aside. 2. In a skillet over medium-high heat, brown bacon; drain, set aside. 3. Place water, broth, potatoes, garlic, and onion in a pot; simmer over medium heat until potatoes are tender. 4. Add sausage and bacon to pot; simmer for 10 minutes. 5. Add kale and cream to pot; season with salt and pepper; heat through.

| Baked Potato Soup Ingredients 2 1/2 lbs baking potatoes 2 1/2 lbs baking potatoes 1/4 cup all-purpose flour 1/4 cup all-purpose flour 6 cups 2% reduced-fat milk 1 cup reduced-fat shredded extrasharp cheddar cheese divided 1 teaspoon salt 1/2 teaspoon black pepper 1 cup reduced-fat sour cream 3/4 cup green onions chopped 6 slices veggie bacon Instructions Bake potatoes, discard skin, coursly chop In pot add fluor, gradually add milk, cook over med till thick and bubbly, aprox. 20 min Add potatoes, cheese, salt and pepper Stir in sour cream and 1/2 of onions Cook till heated through Serve toped with veggie bacon and remaining green onions Green Minestrone 1 Onion chopped 2 ribs Celery diced 2 cloves Garlic minced 1 c Zucchini chopped 1 Bay leaf 1 can (12 oz) White beans 8 c Vegetable broth 1 c Ditalini 1/2 lb Green Beans 10 oz Spinach 12 Basil leaves shredded Instructions saute onion, celery, garlic, zuchini, bay, salt and pepper Add broth, bring to a boil, add beans and pasta and green beans, bring to a boil, 8 min. Stir in basil. I like to top with a little pesto.

| I have 2 black bean recipes I use. One for dried beans and one for canned. Ingredients 1/4 c Red onion chopped 1/4 c Water 1 tSP Cumin 1/4 tsp Ground red pepper 14 oz Vegetable broth 3 can (12 oz) Black beans drained, rinsed 2 tsp Lime juice 1 tsp Liquid smoke Instructions Combine first 5 ingredients Add 2 cans beans and liquid smoke, bring to a boil, simmer 15 min. Blend till smooth 2nd recipe: * pound dried black beans * 4 cups vegetable broth * 2 cups chopped onion * 1 cup water * 1 tablespoon ground cumin * 3 bay leaves * 1 jalapeno, seeded and finely chopped * 2 tablespoons fresh lime juice * 1 teaspoon kosher salt * 1/4 cup chopped fresh cilantro * 1/2 cup reduced-fat sour cream 1. Sort and wash beans; place in a large bowl. Cover with water to 2 inches above beans; cover and let stand 8 hours. Drain. 2. Combine beans, broth, and next 5 ingredients (through chile) in an electric slow cooker. Cover and cook on LOW 10 hours. Discard bay leaves. Stir in sour cream, juice and salt. Top with sour cream if desired.

Senior Yorkie Talker | tortilla soup!! all you need is: cook whole chicken breast in a skillet (i use the same pot im going to be using for the soup) with olive oil. seasoned with cumin, pepper, and cayanne pepper. when its done cooking all the way through, take out the pot and set to the side to cool. add chopped onion and bell peppers (green and red) and sautee until soft. add garlic (or garlic powder), more cayanne if you like it spicy like me, two 14.5ou of chicken broth, canned corn, canned green beans, fresh lemon juice, a cup of chunky salsa, green onions and chili powder. while this is all heating up, you can shred the cooled chicken and add.. serve with lots of grated cheese, sour cream, cilantro, and crumbled tortilla chips in like 30 mins youll have a really yummy dinner!

| Holy crap so many great choices!!!!!!! I'm gonna be set for life now!! I think the winner for tonight is ding ding ding Allison's recipe for Chicken Tortilla Soup. Sounds fantastic and it's the only recipe where I have everything I need on hand. Thanks ladies!!!! I will be coming back this thread frequently if this weather keeps up.
