Furbutts = LOVE Donating Member Moderator | New Fave low-cal recipe: Spaghetti Squash "PASTA" I'm always looking for new, cool recipes. As a runner, a low-carber, and a pescatarian - I've always got my eyes peeled. This recipe kind of reminds me of Pad Thai - a peanut-y, ginger-y, asian-y flavor that I just love. Cut a spaghetti squash in half, lengthwise, remove seeds/guts. Place face down in micro-safe dish, add about 1/2 inch of water - microwave, covered, for 10 minutes, remove from dish to cool. When cooled enough to handle, take fork and scrape insides of squash - the insides will fall right out like "squash pasta noodles" (about the size of angel hair). Sauce: In saucepan, over med heat, combine: 1/4 c. water 3T peanut butter (or, I use PB2 peanut butter powder - 54 cals for 2T) 1T chopped ginger 2T soy When smooth, add squash noodles, toss. Cook until warm. Serve with chopped green onions as garnish. The sauce makes about 2-3 servings - but you'll have LOTS of "noodles" left over for future. This is SO delish!

| I LOVE spaghetti squash but I never had it prepared that way. It sounds really good. I'll have to try it

| I don't like ginger can you suggest another spice that might work - I LOVE spaghetti squash!!! And where do you get PB2 peanut butter powder?

| My parents make something similar to this because they have to be on a low carb diet for my dad's diabetes and they love this recipe!

When water is added, it is made into peanut butter (granted, it doesn't taste like Skippy exactly - it has a more natural taste, like natural peanut butter). I like to add it to peanut butter recipes, yogurt (peanut bttr yogurt is heaven), asian dishes etcetera. The great thing is that it is 54 calories per 2T, vs. 200 cals for regular PB! | WHat else can you do with this squash? Can you use it in place of spaghetti and put spaghetti sauce on it? I've seen it but never tried it. |

| This sounds delish!!! I just copied it and gave it out at the office. One of the girls told me she served white clam sauce on the spaghetti squash and loved it!!

| That sounds so delicious and easy! I have a spaghetti sqaush recipe that I love but it's pretty unhealthy (lots of butter and sausage ) and so I hardly ever make it. I will definitely be giving this one a try- probably this week. Thanks for sharing it!
