Donating YT 11K Club Member | Healthy Recipes? I have been eating better lately, eating organic foods and whole wheat bread instead of white, whole grain pasta, etc. but I would like to cook more healthy meals. Does anyone know of any good recipes but that are also healthy? I also like Couscous...does anyone know any recipes with couscous?

| Pork Fried Rice 3 tbsp. Soy sauce 2 tbsp. Rice vinegar or cider vinegar 1 tbsp hot sauce 2 tbsp. Veg. Oil 4 lg. Eggs, beaten lightly 8 oz. White button mushrooms, sliced 2c. Pkg. Coleslaw mix 8 scallions, white parts sliced thin, green parts cut into ½ in. pieces 2 - ( 8.8 oz.) pkgs. Uncle Ben’s original Long Grain Ready Rice 1-2c. Shredded leftover meat from ribs 1c. Bean sprouts, chopped course Combine the soy, vinegar & hot sauce in a bowl & set aside. Heat 2 tsp. oil in a non stick skillet over med. high heat. Cook the eggs scrambling & breaking up into small pieces, about 1 ½ min. Transfer to a new bowl. In the empty skillet heat another 2 tsp oil over med. high heat. Cook the mushrooms til lightly browned, about 5 min. Place in another bowl. Cook the coleslaw mix & scallion whites til just softened, about 5 min. Add the rice to the pan w/ the slaw mix, add the soy mix, the meat, bean sprouts, egg, & scallions & cook, stirring constantly, until heated through, 1-2 minutes. Serves 4 Note: It’s also great w/ left over grilled chicken. Or even cooked ground turkey. I used the pork from left over grilled ribs, very good…

| Light & Creamy Hot Dips Makes 4c. Topping: 1 slice hearty white sandwich bread 2 tbsp. grated Parmesan cheese Creamy Base: 1c. Light cream cheese, room temp. 1/2c. Shredded low- fat cheddar cheese 1/4c. Low-fat sour cream 2 tbsp. Parmesan cheese, grated 2 tbsp. Lemon juice 2 tbsp. Chopped parsley ½ tsp. Cayenne pepper 1 recipe prepared for artichokes, crab, or spinach ( recipes follow) S&P Adjust oven rack to upper middle & oven at 375 degrees. Lightly spray 2 qt. casserole dish. For the topping, process the bread & cheese in a food processor til finely ground, about 15 sec. For the base, pulse the cream cheese, cheddar, sour cream, parm., lemon juice, parsley & cayenne pepper w/ one of the prepared recipes until coarsely chopped, about ten 1 sec. pulses. Season w/ the S&P. Scrape mixture into the dish. (Can be put in the refrig. for up to two days. Bring back to room temp. before baking.) Sprinkle topping over dip & lightly spray crumbs w/ cooking spray. Bake until browned & bubbly, about 20 min. Serve. Artichoke: Toss 2 ( 9oz. ) pkgs. frozen hearts ( don’t thaw) w/ 1tsp. olive oil, ½ tsp. salt & ¼ tsp. pepper on a foil lined sheet. Bake 450 for 20 -30 min. or til browned on the edges., then chop coarsely. Heat 2 tsp. of olive oil in skillet over med. high heat. Add one med. onion chopped fine, cook til soft, about 6 min. Add artichokes & cook til starting to brown & liquid evaporates, about 5 min. Add 2 minced garlic cloves & 2 tsp. minced fresh thyme cook for about 1 min. more. Crab: Heat 2 tsp. in skillet til hot, add 1 med. onion, & 1 red bell pepper chopped fine, cook til soft, about 6 min. Stir in 2 minced garlic cloves, cook about 1 min. Stir in ¾ lb. lump crab meat ( picked over) & 1 ½ tsp. Old Bay seasoning. Spinach: Heat 2 tsp. olive oil in skillet over med. high heat. Add 1 med. onion & 1 red bell pepper chopped fine. Cook til soft, about 6 min. Add 1 ( 16oz.) pkg. frozen spinach &cook til defrosted & liquid evaporates, about 10 min. Stir in 2 minced garlic cloves, 2 tsp. minced fresh thyme & 1 tbsp. lemon juice, cook about 1 min. 1/3c. serving Artichoke Dip: calories 110, fat 6g, sat fat 3g Crab Dip: calories 120, fat 6g., sat fat 3.5g Spinach Dip: calories 100, fat 6 g. sat. fat 3g.

| One of my favorite food sites is cookinglight.com. Healthy and yummy. Almost every recipe I've ever made from them has been a keeper. You can put couscous in the search and probably come up with a million recipes. You might have to be a subscriber to the magazine or have the monthly keyword to search- if so just let me know and I'll look up the keyword for the month in my magazine.

| Oven Roasted Sweet Potato Fries Heat oven to 450 1 tbsp. Veg oil 4 med sized sweet potatoes, scrubbed. S & P Spray a baking sheet w/ Pam. Cut the sweet potatoes lengthwise in half, then cut those halves in half again lengthwise. Then cut each into about three wedges. You should get about 12 wedges from each potato. Put in a bowl & toss w. the oil & salt & pepper. Place in a single layer on the sheet. Bake for about 40 min. or til lightly browned, tossing a few times during cooking to evenly brown. Note: You can use Kosher salt, or course sea salt. Leave the skin on for extra fiber.
