No Longer a Member | OK...who's got their corned beef in the crock pot? ...and what are you having with it? I do. I'm having: Corned Beef red potatoes carrots cabbage Irish soda bread (or I might just form the dough into scones) Bread Pudding with whiskey sauce If anyone wants, I can post the recipes for the soda bread and the bread pudding. The bread pudding is a lowfat recipe that is better than any I've ever had! I'm still sticking to WW, so I've got to be good still. The soda bread is the part that is hard to be good with. I could eat the whole loaf! |

No Longer a Member | Irish Soda Bread (or scones) Irish Soda Bread 2 cups all purpose flour 1 1/2 ts baking powder 1/2 ts baking soda 1/2 ts salt 2 TB sugar 1/4 cup shortening 1/2 cup raisins 1 ts caraway seeds 1 egg 2/3 cup lowfat buttermilk optional eggwash made from 1 egg yolk and 1tb milk. Preheat oven to 375F (400 for scones). In a large bowl, sift together flour, baking powder, soda, salt, and sugarr. Cut in shortening until crumbly (If making scones add 1 or 2 more tb flour). Add raisins and caraway seeds. In a small bowl, whisk egg and buttermilk together. Add to the crumbly mixture and mix just until combined. Gently turn out the dough on a floured board and knead only 2-3 times--just enough to make it come together. If you knead it too much it will get tough and rubbery. For bread: Pat the dough into a large round ball and flatten only slightly. Make a large cross in the top of the dough with a floured knife. Place on a cookie sheet sprayed with nonstick spray, or lined with nonstick foil (I love that stuff!) optional, brush with egg wash. Bake at 375 for 30-40 minutes. For scones, Pat the dough into a large flat 8" x8" square. with a floured knife, cut into 9 squares (like making a tic tac toe in the dough). brush with egg wash if desired and bake at 400 for 15-20 minutes. |

No Longer a Member | Irish Bread Pudding with Caramel-Whiskey Sauce Irish Bread Pudding with Caramel-Whiskey Sauce Cooking Light c2000 Oxmoor House 1/4 cup light butter melted (I just use 2 tb real butter) 1 (10-ounce) French bread baguette, cut into 1-inch-thick slices 1/2 cup raisins 1/4 cup Irish whiskey (Irish whiskey is too expensive for me. I use Jim Beam) 1 3/4 cups 1% low-fat milk 1 cup sugar 1 tablespoon vanilla extract 1 (12-ounce) can evaporated fat free milk 2 large eggs, lightly beaten Cooking spray 1 tablespoon sugar 1 teaspoon ground cinnamon Caramel Whiskey sauce (recipe below) 1. Preheat oven to 350. 2. Brush melted butter on on side of French bread slices, and place bread, buttered sides up, on a baking sheet. Bake bread at 350 for 10 minutes or until lightly toasted. Cut bread into 1/2-inch cubes. 3. Combine raisins and whiskey in a small bowl; cover and let stand 10 minutes or until soft (do not drain). 4. Combine 1% low-fat milk and next 4 ingredients in a large bowl; stir well with a whisk. Add bread cubes and raisin mixture, pressing gently to moisten; let stand 15 minutes. 5. Spoon bread mixture into a 13 x 9-inch baking dish coated with cooking spray. Combine 1 tablespoon sugar and cinnamon; sprinkle over pudding. Bake at 350 for 35 minutes or until set. Serve warm with Caramel-Whiskey Sauce. Yield: 12 servings (serving size: 1 [3-inch] square and 2 tablespoons sauce). Caramel-Whiskey Sauce 1 1/2 cups sugar 2/3 cup water 1/4 cup light butter (again, I use 2 tb real butter--same thing). 1/4 cup (2 ounces) 1/3-less-fat cream cheese (neufchatel cheese) 1/4 cup Irish whiskey 1/4 cup 1% low-fat milk 1. Combine sugar and water in a small, heavy saucepan over medium-high heat; cook until sugar dissolves, stirring constantly. Continue cooking 15 minutes or until golden (do not stir). Remove from heat. Carefully add butter and cream cheese, stirring constantly with a whisk (mixture will be hot and will bubble vigorously). Cool slightly, and stir in whiskey and milk. Yield: 1 1/2 cups (serving size 2 tablespoons). |

| We did our corned beef in the crock pot on Friday so we could have some today BEFORE dinner time if we wanted it. (I know, we cheated.) Boy was it good. Thanks for the recipes.

| I was at the grocery store yesterday and they hand corn beef samples w/sauerkraut. Does anyone have a good recipe for this? It was the first time I had ever tried it and it was awesome. |

| I had my corned beef in the crock pot on Thursday. I put in baby carrots, potatoes, cabbage and the corned beef. It was great!! |
