| Hi again, Actually, 1-2-3 Chili is one of the cheapest to make...and one of the mildest, because my husband can't take too much spice (gives him indigestion) So if you want mild, cheap chili...here's the recipe. I guess, technically, it doesn't qualify as "homemade" because I did use a seasoning packet.. LOL. 1 yellow onion, finely chopped 1 lb. chili meat (lean ground beef I used tonight and it tasted the same) 1 packet McCormick chili spices (it's powdered) 1 can tomato paste 1 can tomato sauce 1 green bell pepper (chopped) 1 whole can Coca-Cola (I've tried Pepsi and Diet Coke...not as good) 2 cans kidney beans in chili sauce 2 Tablespoons Catsup (AKA: Ketchup) 2 Cloves Garlic (very finely chopped) 1 clove would probably do it but I'm directed by my doctor to eat a lot of garlic so I add two....hehehe Shredded cheese (any kind, but we prefer sharp cheddar) 3 large stewed tomatoes (cut up) 3 large mushrooms (Sliced) Brown the meat with the onions, garlic, mushrooms and bell peppers. Add the chili packet and stir in until well mixed. Add all remaining ingredients except the cheese. Let it sit on the stove on low heat for a long while, stirring occasionally, to let all those flavors mingle (I usually leave it there for a half hour...stirring it every 5 to 10 minutes). Spoon into bowls, top with cheese, and serve with a killer cornbread and salad. The recipe is so simple, but it's a very nice meal to make when you have a little puppy underfoot and don't have much time for lengthy 5-course meals. | LOL thats a good recipe! I'm going to have to try that. This is my recipe, literally this is what I do. Dump a package (1lb roughly) of raw turkey burger in the crock pot and break it up with a fork. Dump a bag of frozen peppers & onions Dump 4 cans of beans (2 red kidney, 1 pink and 1 chick pea) Dump a bunch of cumin and a bunch of chili pepper seasoning (you can add red pepper flakes to spice it up if you'd like) Dump 2 large large cans of crushed tomatoes and 1 large can of stewed tomatoes. Stir it all up. Turn crockpot on and let it cook on low for 8 hours. Isn't that sad???? LOL The kids love it though, its super healthy and takes me all of about 7 mins to make, literally!
