| Need help finding recipe Thurs, I was out recruiting for my job. The clinic we were recruiting from fed us lunch. We had the yummiest salad. I didn't add any dressing and it still was very good. I want to know the recipe, but I only know a few of the ingredients. It had mozzarella, croutons, tomatos, and either baby spinach or baby arugula. Can anyone help me fill in the blanks?

| I could, but I don't know the name of the place, or who they used for catering. We were just sent an email that said, "Be here at this time."

Well I think we can rule out spinach or arugula if we try.... were the leaves mild tasting or peppery? Were they rounded on the lower edges or spiked and jagged? arugula picture - Google Search http://www.google.com/images?client=...g&ved=0CCYQsAQ

| they were round leafs. I don't think they were peppery. Does that help narrow it down?

yes.. If they didn't bite your tongue they were not arugula. So we are looking for a spinach salad

Maybe a take on a caprese salad? light drizzle of olive oil and salt and pepper. Were the mozzerella in rounds?

| Yes! The mozzarella was moist and wasn't what you would normally find I hose bags of pre shredded cheese.

| Did it look like any of these? caprese salad - Google Search There's tons of variations of it. Sometimes they use cherry tomatoes and mini mozzarella balls and skewer them with basil for caprese lollipops. The more authentic kind is made with buffalo mozzarella. You can find fresh mozzarella in balls (in bags or containers with water in them) at fancier markets, kind of expensive, but very yummy.
