| CHEAP (and easy) meal ideas Okay hubby and I are pretty much broke, but I figured someone might be able to help me come up with some cheap ideas before I go to the store. I'm buying the usual hamburger, chicken, spaghetti stuff, frozen pizzas, hot dogs, eggs, milk, bread, etc.... but okay, I'll admit, I'm kitchen stupid and don't know how to cook... well anyways. So it's got to be something cheap as well as easy.

| OK here are a few that are very easy AND yummy! Both make really good left overs. Dried white lima beans (small or big pack depends on how hungry you are) Small- med onion chopped pk of ham hocks or smoked turkey legs salt & pepper Rinse beans, put in a big pot, lay the 'meat' on top, add onions, fill so the water covers the meat. Bring to a boil & simmer for at least an hour. Take the meat off the bone & mix back in. Enjoy (Smash the bean in the pot a little & it thickens the broth) You can make some jiffy corn bread to go with this too. NEXT Chicken legs or thighs (what ever is cheapest) Viggo Yellow rice mix. 1 T oil Brown chicken add rice & amt of water on packet mix & cook per packet inst plus 20 min for chicken. Put salsa on top of you want. |

| Nacho Casserole Ground Beef Shredded Cheese (cheaper to buy the block and shred it yourself) 1 can cream of celery or cream of mushroom soup 1 jar salsa 1 bag of Doritos Brown ground beef in skillet. Pour salsa and soup in a bowl and stir together. Microwave for 1 minute. Mix in drained ground beef. Now in layer Doritos on the bottom of a rectangular baking dish. Spread beef mixture on top. Cover in cheese. Bake in the oven at 375 until cheese is melted.

| Baked Chicken Nuggets: Baked Chicken Nuggets - Allrecipes Taco Salad: Taco Salad I - Allrecipes Chili: 2lbs ground beef 3 large cans tomato sauce 2 cans chili beans 1 can dark kidney beans 1 can light kidney beans 1 chopped onion Instructions: Brown meat with onions. Drain off meat. Pour all ingredients in large pot. Simmer for 1-2 hours. |

| Not sure about the cheap, but... I think it is: Toss some mixed frozen veggies into a pan... (with a little olive oil at the bottom)....(and maybe a little water)... when they're defrosted, toss in a can of meat of some type..like canned turkey or chicken. Toss in a scoop of Cous-Cous (buy it in bulk in a baggie by weight someplace).. or toss in a scoop of Rice ... or a scoop of Egg Noodles... then let that simmer for a while in it's own juices ...toss in some spices of your own imagination, like garlic, "Old Bay", etc.... use imagination.... or even if you want to splurge, toss in a packet of that pre-made oriental spice thing you find in the spice packet mixes (usually by the gravy mixes).... Cook til done. My husband loves it. I have no set plan on the spicing, I just do what comes to mind at the time. |

| I go to the grocery store around 10 in the morning and look in the meat department for reduced meat...usually half the price..then I freeze it right away until I am ready to use it...the other day I was at Sams club and their 4lb packages of bacon (which we love) was 4.99 usually 11.99...what a deal..i bought all that they had....hamburger I always buy at reduced prices.....ground chuck the other day...I bought 5lb packages for 3.99....GROUND CHUCK....oh yeah....as far as recipes....when my husband and I were in college we lived on Hamburger with cr of mushroom soup over rice....doesnt' get much cheaper than that...and it was good!! |

| .....Oh, I forgot to ad that I buy some of this stuff at Costco (or Sams Club...whatever is in your area).. in bulk. The veggie mix frozen, canned turkey or chicken. A membership to either of those may be expensive, but it really can be worth it in the long run. Try a trial run thru one of the stores for free to see if it's for you. |

| crock pot! you can use inexpensive meat and veggies and make a meal that lasts a few days. fresh, tasty and healthy. allrecipes.com has a budget cooking section and tons of crock pot recipes.

| Hamburger Pie Brown a pound of hamburger, drain grease. Add 2 cans tomato soup, 2 cans (drained) green beans. Pour in a cake pan. Add instant mashed potatoes(I do the 8 servings), then top with cheese. Bake at 350 for 30-45 min until cheese is done..this is really good left over also, so makes it very reasonable |

| My cheap go to meal is always a vegetarian chili with tons of beans and veggies and corn bread -- super filling, healthy and fast! I just throw mine in the crockpot in the morning and by evening it's ready to go! And between the DH and I, we always have leftovers for days |

| Enchilladas are cheap and tasty! Beef Enchilladas Need: yellow corn tortillas, old el paso enchillada sauce (red), cheese, ground beef, onions brown ground beef and drain grease, dip tortillas in boiling oil for a couple of seconds, lay them flat in baking pan, lay 1 layer of meat, 1 layer cheese, then another layer of tortillas, another layer of meat, another layer of cheese, sprinkles some onions, place in oven for about 10 minutes. Chicken Enchilladas - same but use chicken, green old el paso enchilada sauce, assadero (white cheese from wal-mart). You can buy chicken legs and place them in a pot with water to boil. Take 2 forks and shred the chicken right off. It goes fast. I usually make rice on the side and rice is cheap too.
