very carefully spoon the frosting into the center of the bottom layer and spread it out. Dont go too close to the edges. Then put the top layer on. Dont put too much frosting on at a time though. I just blob a large spoonful at a time til I think there is enough.

If I understand you correctly you want 2 layers right? If this is the case, bake the cake, then when it is cool cut the cake in half. Spread frosting on top of the bottom half, put the top half on that and then frost the whole cake including the sides. I bake cakes like this all the time and the fosting will stay put, but, the cake has to be cooled before you frost it.

When you finish baking your cake take and put it in the freezer until it is completely cold (approx 1 hour) then take the cake out of frezzer and out of pan. The structure of the cake crumb will solidify and the cake will be much easier to cut in half and you won't end up with lots of crumbling of your cake. You also should keep your frosting for the cake at room temp this will also make it easier to spread. Also a tip for icing the outside of the cake is to put cake back in freezer or fridge before you want to ice it. There is nothing worse then cake crumbs in your icing. Any more questions, please ask...Iown a bakery and decorate cakes for a living!! Lorraine
