| Healthy recipes I know a lot of us are now trying to eat healthier, so I was wondering if anyone has any good recipes for healthy meals and snacks. I've never really cooked healthy, hubby likes fatty foods, I do too!

| For a snack, make the Chex mix recipe on the box, only use margarine instead of butter, or use just 1/2 the butter, and add 2 tablespoons lemon juice. The nuts in it are a source of good fats, and the cereal is filling, but is whole-grain, so it's not too bad for you. Flavor veggies and meats with lemon juice, vinegars, herbs, and a little olive oil if necessary. That way you get lots of flavor, without added calories. I LOVE using Balsamic and Red Wine vinegars on veggies, salads, and chicken or fish. Clean and cut up fruits and veggies and put them in the fridge so they're ready when you feel like snacking. I like my roasted red pepper dip for veggies-and you can make it light or fat free! Roasted Red Pepper Dip 1 cup fat free sour cream 1 cup light Miracle Whip 1 jar Roasted Red Peppers (larger jar, not the small 4 oz jar, but the next size up) 1 large clove garlic 1/2 tsp salt 1 tsp worcestershire sauce 1 tsp dried basil Mix sour cream and Miracle whip in medium bowl. Drain Red Peppers, and cut into small pieces or strips, add to mixture. Add remaining ingredients, and stir until well-mixed. Chill for 2+ hours. Serve w/fresh veggies. Jello Parfaits Make a box of Sugar Free Jello into the Jigglers recipe, and let set. Cut into small cubes. Layer Jello cubes and fat free Cool Whip in a parfait or martini glass, and top with a little fruit. You can do the same with Sugar Free Jello Pudding

| Have you tried Tofu? I was scared of it in the beginning but it really has no flavor so basically you can make it taste like what ever you want. There are all types..soft and firm. So you can make shakes with it but my favorite is an egg white omelet with tofu and tomoatoes inside. Sooooooo yummy! |

| No I haven't. As you were, I'm scared!!! LOL I can just hear my hubby come in from school/work and ask whats for dinner, oh hunny its Tofu. The look would be priceless!

| Weeeeell you can do what I did - dont tell him! I made a stirfry with the tofu and honestly it looked just like thin cut chicken! Like I said it takes on any taste or flavor that you use. It makes yummy fruit smoothies too... Or if you like burgers you can try using portobello mushrooms instead of meet -they are thick mushrooms so it feels like you are really eating a buger, with all the same add ons.... |

| If you like garbonzo beans (chick peas) you can take a can and drain the juice, lay them out on a non-stick cookie sheet and bake them in a 350 degree oven until the outside is a little crunchy...the inside will still be kind of soft. I used to bake them for me and our parrot for an after noon snack. |

| I like to get different flavors of the kashi crackers & eat them with a 7-layer hummus dip (my wal-mart carries it in the specialty cheese/meat section) or you can get the bag of mixed frozen strawberry/blueberry/rasberry I'll thaw a small handful of those (actually I like mine still a little crunchy) & mix it w/the stonefield vanilla yogurt & sprinkle a little bit of granola on top it's really deelish!! also I've tried just about everything kashi makes & it's all good, my favorite is their blueberry waffles. |

| Frozen grapes are a great late night snack instead of ice cream, jsut be careful if you have sensitive teeth like me.......ouch!!

| Have you gotten any more ideas, Christy? Try this-it's lowfat and yummy too! Lowfat Cheese Enchilada Bake Nine 6" tortillas 1 large diced tomato (or I use the smaller/medium can of Petit Diced Tomatoes) 3 green onions, chopped 1 large clove garlic, finely chopped 1 cup lowfat shredded colby-jack cheese 16 oz container non-fat cottage cheese 1 jar Enchilada sauce 1/2 cup lowfat shredded cheddar cheese Preheat oven to 350. Chop green onions, garlic, and tomato. Mix green onions, garlic, co-jack cheese and cottage cheese together in small bowl. Arrange 3 tortillas in bottom of a 9x13 glass baking dish. (Tip-I cut mine in half with a pizza cutter to get them to fit better) Top with 1/2 the cottage cheese mixture, 1/2 the tomatoes. and then 3 more tortillas. Repeat with the other half the cottage cheese mixture, the rest of the tomatoes, then 3 more tortillas. Pour enchilada sauce over the top, and top with shredded cheddar. Cover with foil, bake 25 minutes. Uncover, bake 10-15 minutes more. Let stand 5 minutes, and it will be easier to serve. Serve like you would cut and scoop out lasagna, along with a green salad topped with tomatoes, jalapenos, olives, and any other veggies you like!

| Mmmm...I love grapes! I did get some sugar free jello and some fat free whipped cream....that was so good! So much better than my normal, big bowl of ice cream with lots and lots of chocolate topping.
