I don't really know why, except when they are runny, then, it's a texture thing, but even hard boiled, I just don't like the white part. Too blah I guess. But, if they are scrambled, then I can eat the whole thing.

Personally I think you should eat the entire egg, the yolks contain a lot of good nutrition and fat helps you feel full longer.

I prefer scrambled eggs, 1-2 eggs with 2 additional whites.
I usually eat yolks, just not hard boiled, they're so dry and gross.
I always thought more protein was in the yellow part - very interesting.
